A Very Cranberry Monday

Cranberries are one of the fall's seasonal favorites and most commonly thought to be used in juice or sauce form, but today we're bringing 4 delicious recipes featuring these disease-fighting, antioxidant carrying, did-we-mention-delicious, fruit.  In fact, according to WebMD, this fruit ranks higher than almost every fruit and vegetable on the list when it comes to its advantages due to antioxidants.

Our first cranberry delight, comes in bar form, perfect for breakfast on the go, or a quick snack.  And get this...they're no bake!  Collecting Memories' Chewy No Bake Oatmeal Bars have 6 healthy, natural ingredients, to create these perfect little bars.


The next recipe we're featuring is another easy recipe, perfect for on the go.  Cranberry Craze Salad from My Slice of Sunday, would be excellent for lunch, or just after a trip to the gym.  They feature a hard boiled egg on the side for extra protein.  With crunchy almonds and cashews, the dried cranberries gives another delightful texture to this simple salad.


Speaking of great texture, the next dish from Inspired Taste, is sure to knock your socks off!  With the smooth roasted squash, paired with chewy cranberries and crunchy walnuts that have been sweetened by delicious brown sugar, you might want to include this dish in your family's Thanksgiving feast too!

A Passion for Pumpkin

Pumpkin-a pretty color, a fun decoration for fall, and a heavenly flavor.  Usually the craze comes when a certain coffee chain unleashes their popular drink on the masses and any and everything pumpkin related starts to trend.  Well, we're here to jump on the bandwagon with these amazing recipes featuring pumpkin, plus a super sweet treat we found on Pinterest, that we just had to share!

Flavors of Fall

Welcome back for this week's edition of Meatless Monday, Flavors of Fall.  We're bringing seasonal favorites like pumpkin, apple, and squash to satisfy your taste buds and give a healthy dose of vitamins and other nutritional perks that are good for you and your family.

Today, we'll start things off sweetly, with some Mini Cinnamon Rolls, brought to you by Two Peas and Their Pod.  The fall favorite, delicious pumpkin butter, is hidden between the soft bread, cinnamon, and ooey gooey frosting.  Pumpkin is known for having large doses of vitamin A, fiber, and potassium, so you can feel better about having one of these delicious rolls.


Another fall favorite, apples, come in quite a variety, but we're here to talk about the ever enticing, Honey Crisp variety.  Ingrid, from A Cozy Apron, shares a crispy, crunchy salad that is brought together with her lovely spiced cider vinaigrette.  You must try it!


We've brought you the sweet, the slightly sour, and now, the savory.  Butternut Skillet Shells from How Sweet It Is, is a creamy, cheesy, hearty dish that features a bevy of health benefits, from vitamins A, B6, and C to fiber, folate, and potassium.  Did we mention it's absolutely delicious?  Try it out tonight and we're sure you'll have another family favorite on your hands.  *To speed up the cooking time, throw the cubed squash and vegetable stock in a microwave safe dish, and cook for 6-7 minutes.  Return to the skillet and follow the rest of the directions accordingly.

Meatless Monday-Fall Flavors Edition

Now that the fall season is in full effect, it's fun to include some of the seasonal fruits and vegetables into our diets.  With pumpkins, pears, sweet potatoes, and squash varieties, among other fabulous flavors, we've found 10 amazing recipes that are begging to be tried!

Let's start with the obvious seasonal favorite-pumpkins!  If you're like me, you know when Starbucks comes out with their famous Pumpkin Spice Latte.  You'll may also know how if you get addicted to them, your daily fix can quickly add up.  According to The Family Kitchen blog, on Babble.com, this copycat recipe is sure to satisfy your cravings. 

Pumpkin Spice Latte
What you'll need is:
2 c. half and half, whole milk, reduced fat, or skim milk
2 tbs. canned pumpkin puree
1-2 tbs. sugar, stevia or splenda
2 tbs. vanilla extract
1/2 tsp. pumpkin pie spice
1-4 shots espresso or very strong coffee
Directions:
Brew your espresso or strong coffee. If brewing strong coffee, use double the amount of grounds you would in your regular coffee. Then combine half and half or milk, pumpkin, sugar, and pumpkin pie spices in a small saucepan. Heat until very hot, but do not boil. Remove from heat and add vanilla. Transfer to a blender or a milk frother and blend until frothy.
Pour 1 cup warm pumpkin milk mixture into coffee mug and add 1-4 coffee shots. Dust with more pumpkin pie spice if desired.  Yields 1-2 servings.

If pumpkin is not your thing...why not the classic fall fruit that's got everyone out visiting orchards...apples!
Spice up your regular breakfast routine with these Apple Spice Waffles or Apple Oatmeal.  For the waffles, simply add nutmeg, cinnamon, and fresh apples to your mix if you've already got a store bought waffle mix, otherwise follow these steps from tasteofhome.com.  Sames goes for the oatmeal-just add some fresh apples, brown sugar, and cinnamon to your instant oatmeal, or for a more homemade recipe-try this one from Eatingwell.com.

Pears, although similar to apples, offer it's own unique flavor, especially when they become ripe in the fall.  This Caramelized Pear Jam recipe from Localkitchenblog.com is great as a gift, or can it and use it year round.  With only 4 ingredients, it does take 2 days to make, but the flavor and possibilities of how to use this are endless!

Not feeling all the fruitiness?  Let's try some more savory dishes that incorporate these delicious fall flavors.  Check out these recipes made with one incredible "super food"-the sweet potato!  These Twice Baked Bourbon Sweet Potatoes are definitely a grown up's favorite side dish.

Or these yummy, creamy Mashed Sweet Potatoes, from The Merry Gourmet, that can be served as a nutritious side dish since they offer almost twice as much fiber as a regular potato and tons of vitamins.



What about all the varieties of squash that you now see available at your grocery store or farmer's market?  That butternut and acorn squash seems intimidating, but with these spins on classic recipes, you'll be mad you didn't try them sooner!

The traditional comfort food of mac and cheese has this tasty surprise-butternut squash-hidden inside.  Shhhh!  Don't tell the kids-they'll never know!
